It is really nice to receive, nothing beats the bonding over good food that was cooked with love. It is equally so nice to walk in to your friends or family members or even a colleague dinner gathering with a plate or cake that you baked.
Yet spending many hours in the kitchen might not be your thing, me neither!
In collaboration with Mintbasil market , as part of the #MBMHOLIDAYCHALLENGE I prepared three quick recipes of an appetizer, side dish and baked a cake with each taking 10-20 minutes preparation only!
– Labneh zaatar balls with black olive jam:
Super easy, I used the good thymes nbr 3 mix to roll the labneh balls in it, then I served it on chia seeds crackers from Super healthy homemade mamoune and the black olive jam from Zejd
– While many are serving Turkey for dinner, add a unique touch with this spicy quinoa as a side dish.
Start by soaking one cup of quinoa ( I used Live organic pre washed quinoa) in hot water for an hour. Discard the water after.
Heat 1 tablespoon of coconut oil in a pan, add cinnamon sticks, cardamom pods, cloves, a pinch of curry ( I used biopret) and black pepper and stir until fragrant.
Add the quinoa, stir and add some salt. Cover with 1 cup of hot water and let it simmer on low heat until all water is absorbed.
Serve with some chestnuts.
And finally, this easy cake is a crowd pleaser and ready in an hour.
All you need is:
Bites of delight gluten free chocolate cake mix
Instead of 4 eggs I used one and two ripe bananas
Pinch of ground ginger
Naturalia chocolate chips
1/4 Sliced orange
1/4 cup Nabat organic rice drink or any milk of your choice
Pre heat the oven on 180 C
Mash the bananas and mix all the ingredients except the orange
Decorate the top of the cake mix

Leave to cool and enjoy!
